Ingredients
Scale
- 2 medium zucchinis, cut into 1/4-inch thick rounds
- 1/2 cup gluten-free all-purpose flour
- 1/4 cup grated Parmesan cheese (optional, ensure it's gluten-free if needed)
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- Step 1: Preheat your air fryer to 400°F (200°C).
- Step 2: In a medium bowl, combine the gluten-free flour, Parmesan cheese (if using), garlic powder, paprika, salt, and pepper.
- Step 3: Toss the zucchini rounds with the olive oil in a separate bowl.
- Step 4: Dredge the zucchini rounds in the flour mixture, ensuring they are evenly coated. Shake off any excess flour.
- Step 5: Arrange the zucchini rounds in a single layer in the air fryer basket. Do not overcrowd; you may need to cook in batches.
- Step 6: Air fry for 8-10 minutes, flipping halfway through, until the zucchini is tender and golden brown. Serve immediately.
Notes
- Store leftover air-fried zucchini in an airtight container in the refrigerator for up to 2 days.
- For best results, reheat the zucchini in the air fryer at 350°F (175°C) for a few minutes to crisp them up again.
- Serve these crispy zucchini rounds as a tasty side dish or a flavorful topping for salads and grain bowls.
- For extra crispy zucchini, lightly spray the coated rounds with olive oil before air frying.
