  • Total Time: 35 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 1 ½ cups rolled oats
  • ½ cup all-purpose flour
  • ½ cup packed light brown sugar
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup mashed ripe bananas (about 2 medium)
  • ¼ cup unsalted butter, melted
  • ½ cup chopped walnuts or pecans (optional)
  • 1 teaspoon vanilla extract

Instructions

  1. Step 1: Preheat oven to 350°F (175°C). Grease and flour an 8×8 inch baking pan.
  2. Step 2: In a large bowl, combine rolled oats, flour, brown sugar, baking soda, and salt.
  3. Step 3: In a separate bowl, whisk together the mashed bananas, melted butter, and vanilla extract. Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix. Fold in the nuts (if using).
  4. Step 4: Pour the batter into the prepared baking pan and spread evenly.
  5. Step 5: Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  6. Step 6: Let the bars cool completely in the pan before cutting into squares.

Notes

  • Store leftover Banana Oatmeal Bars in an airtight container at room temperature for up to 3 days, or freeze them for longer storage.
  • For a warm, gooey treat, reheat individual bars in the microwave for 15-20 seconds.
  • Serve these bars with a dollop of Greek yogurt or a drizzle of honey for an extra flavour boost.
  • To prevent overly dry bars, don't overbake; start checking for doneness at 20 minutes to ensure they retain their moistness.
