Ingredients
- All-purpose flour: 1 1/2 cups
- Unsalted butter, cold and cubed: 1/2 cup (1 stick)
- Granulated sugar: 1/4 cup
- Salt: 1/4 teaspoon
- Egg: 1 large
- Blackberry jam: 1 cup
- Shelled pistachios, roughly chopped: 1/2 cup
- Powdered sugar: 2 tablespoons (for dusting)
Instructions
- Step 1: Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides.
- Step 2: In a food processor, combine flour, cold butter, sugar, and salt. Pulse until the mixture resembles coarse crumbs. Add the egg and pulse until the dough just comes together.
- Step 3: Press two-thirds of the dough into the prepared pan to form a crust. Bake for 15-20 minutes, or until lightly golden.
- Step 4: Remove from oven and spread blackberry jam evenly over the partially baked crust. Sprinkle the chopped pistachios evenly over the jam.
- Step 5: Crumble the remaining dough over the pistachios. Return to the oven and bake for another 20-25 minutes, or until the topping is golden brown and the jam is bubbling.
- Step 6: Let cool completely in the pan before lifting out using the parchment paper overhang. Cut into bars and dust with powdered sugar before serving.
