  • Blackberry jam: 1 cup
  • Shelled pistachios, roughly chopped: 1/2 cup
  • Powdered sugar: 2 tablespoons (for dusting)

Instructions

  1. Step 1: Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides.
  2. Step 2: In a food processor, combine flour, cold butter, sugar, and salt. Pulse until the mixture resembles coarse crumbs. Add the egg and pulse until the dough just comes together.
  3. Step 3: Press two-thirds of the dough into the prepared pan to form a crust. Bake for 15-20 minutes, or until lightly golden.
  4. Step 4: Remove from oven and spread blackberry jam evenly over the partially baked crust. Sprinkle the chopped pistachios evenly over the jam.
