Ingredients
- Cauliflower florets: 1 medium head
- Bacon: 8 slices
- Cherry tomatoes: 1 pint
- Romaine lettuce: 1 heart
- Mayonnaise: 1/2 cup
- Red wine vinegar: 2 tablespoons
- Sugar: 1 teaspoon
- Black pepper: 1/4 teaspoon
Instructions
- Step 1: Cook bacon until crisp. Drain on paper towels and crumble.
- Step 2: Steam or blanch cauliflower florets until tender-crisp, about 5-7 minutes. Drain well and let cool slightly.
- Step 3: Halve or quarter cherry tomatoes. Chop romaine lettuce into bite-sized pieces.
- Step 4: In a large bowl, combine cauliflower, bacon, tomatoes, and lettuce.
- Step 5: In a small bowl, whisk together mayonnaise, red wine vinegar, sugar, and pepper.
- Step 6: Pour dressing over salad and toss gently to combine. Serve immediately or chill for later.
