Instructions

  1. Step 1: Combine blueberries, sugar, lemon juice, lemon zest, cinnamon (if using), and water in a large, heavy-bottomed saucepan. Stir gently to combine.
  2. Step 2: Bring the mixture to a rolling boil over medium-high heat, stirring constantly to prevent sticking. Once boiling, continue to boil hard for 1 minute, stirring frequently. If using butter, add it now.
  3. Step 3: Reduce heat to medium-low and simmer for 10-15 minutes, or until the jam has thickened to your desired consistency. Skim off any foam that rises to the surface. Use a spoon to check for setting point: a small amount of jam placed on a chilled plate should wrinkle slightly when pushed with a finger.
  4. Step 4: Remove the jam from the heat and carefully ladle it into sterilized jars, leaving about 1/4 inch of headspace. Wipe the rims of the jars clean.
