Instructions
- Step 1: Combine blueberries, sugar, lemon juice, lemon zest, cinnamon (if using), and water in a large, heavy-bottomed saucepan. Stir gently to combine.
- Step 2: Bring the mixture to a rolling boil over medium-high heat, stirring constantly to prevent sticking. Once boiling, continue to boil hard for 1 minute, stirring frequently. If using butter, add it now.
- Step 3: Reduce heat to medium-low and simmer for 10-15 minutes, or until the jam has thickened to your desired consistency. Skim off any foam that rises to the surface. Use a spoon to check for setting point: a small amount of jam placed on a chilled plate should wrinkle slightly when pushed with a finger.
- Step 4: Remove the jam from the heat and carefully ladle it into sterilized jars, leaving about 1/4 inch of headspace. Wipe the rims of the jars clean.
- Step 5: Place lids and rings on the jars, and process in a boiling water bath for 10 minutes (adjust processing time based on your altitude – consult a canning guide for specific instructions).
- Step 6: Remove jars from the canner and let them cool completely. You should hear a "pop" sound as the jars seal. Check seals by pressing on the center of each lid; if it doesn't flex, the jar is sealed.
