Ingredients
- Cod fillets: 1.5 pounds
- Salt pork, diced: 4 ounces
- Onion, thinly sliced: 1 medium
- Molasses: 1/4 cup
- Dry mustard: 1 teaspoon
- Ketchup: 2 tablespoons
- Water: 1/2 cup
- Pepper: 1/4 teaspoon
Instructions
- Step 1: Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
- Step 2: Layer half of the sliced onion in the bottom of the prepared baking dish. Arrange the cod fillets over the onions.
- Step 3: In a bowl, combine molasses, dry mustard, ketchup, water, and pepper. Mix well to form a smooth sauce.
- Step 4: Pour the sauce evenly over the cod fillets. Sprinkle the diced salt pork over the top. Then cover with the remaining sliced onions.
- Step 5: Bake for 30-40 minutes, or until the cod is cooked through and flakes easily with a fork and the onions are tender.
