Ingredients

  • Unsalted Butter, softened: 1 cup (2 sticks)
  • Powdered Sugar: 4 cups
  • Heavy Cream: 2-4 tablespoons

  • Semisweet Chocolate: 12 ounces
  • Vegetable Shortening: 1 tablespoon

Instructions

  1. Step 1: In a large bowl, cream together the softened butter and powdered sugar until light and fluffy. Start with 2 cups of powdered sugar and gradually add more until the mixture reaches a good consistency.
  2. Step 2: Add the vanilla extract, salt, and 2 tablespoons of heavy cream. Mix well. Add more heavy cream, 1 tablespoon at a time, until the buttercream is smooth and easily pipeable, but not too soft.
  3. Step 3: Roll the buttercream into 1-inch balls. Place the balls on a baking sheet lined with parchment paper and chill in the refrigerator for at least 30 minutes to firm up.
  4. Step 4: While the buttercream balls are chilling, melt the semisweet chocolate and vegetable shortening in a double boiler or microwave in 30-second intervals, stirring in between, until smooth.
  5. Step 5: Remove the chilled buttercream balls from the refrigerator. Dip each ball into the melted chocolate, using a fork or dipping tools to ensure they are fully coated. Return to the parchment-lined baking sheet.
  6. Step 6: Immediately sprinkle the chocolate-covered truffles with desired toppings, such as sprinkles or chopped nuts. Let the chocolate set completely before serving.

  • Store leftover truffles in an airtight container in the refrigerator for up to a week, allowing them to soften slightly before serving.
