Ingredients

  • Radishes, trimmed and halved: 1 pound
  • Unsalted butter, melted: 2 tablespoons
  • Fresh thyme sprigs: 4
  • Garlic, minced: 2 cloves
  • Olive oil: 1 tablespoon
  • Salt: 1/2 teaspoon
  • Black pepper: 1/4 teaspoon
  • Lemon juice: 1 teaspoon

Instructions

  1. Step 1: Preheat oven to 400°F (200°C).
  2. Step 2: In a large bowl, toss the radishes with melted butter, olive oil, minced garlic, salt, and pepper. Make sure the radishes are evenly coated.
  3. Step 3: Spread the radishes in a single layer on a baking sheet. Tuck the thyme sprigs amongst the radishes.
  4. Step 4: Roast for 20-25 minutes, or until radishes are tender and slightly browned, flipping halfway through.
  5. Step 5: Remove from oven and drizzle with lemon juice. Serve immediately.
