Instructions
- Step 1: Prepare the apples: Remove stems and slice apples into approximately 1/2-inch thick slices. Insert a wooden stick into the core of each slice, ensuring it is securely attached.
- Step 2: Prepare the caramel: In a medium saucepan, combine the granulated sugar, corn syrup, and water. Stir until the sugar is moistened.
- Step 3: Cook the caramel: Place the saucepan over medium heat and bring to a boil. Do not stir after it begins to boil. Let it cook until the caramel reaches a deep amber color and a candy thermometer registers 300°F (hard-crack stage). This will take approximately 10-15 minutes.
- Step 4: Add flavor: Remove the saucepan from the heat and carefully stir in the butter, vanilla extract, and salt. Be careful, as the mixture will bubble up.
- Step 5: Dip the apple slices: Working quickly, dip each apple slice into the hot caramel, twirling to coat evenly. Lift the slice and let any excess caramel drip off.
- Step 6: Cool and set: Place the caramel-coated apple slices on a parchment paper-lined baking sheet. Let them cool and the caramel harden for at least 30 minutes before serving.
Notes
- To prevent sticking, store leftover caramel apple slices in a single layer between sheets of parchment paper in the refrigerator.
- Reheating isn't ideal as the caramel can become sticky, but briefly chilling can help re-harden slightly softened caramel.
- Serve these with a sprinkle of flaky sea salt or chopped nuts for a delightful flavor contrast.
- For the best caramel consistency, avoid stirring after the sugar dissolves to prevent crystallization and ensure a smooth, glossy finish.
