Instructions
- Step 1: Preheat oven to 350°F (175°C). Combine graham cracker crumbs, ¼ cup sugar, and melted butter in a medium bowl. Press mixture firmly into the bottom of a 9-inch springform pan.
- Step 2: In a large bowl, beat cream cheese and 1 cup sugar until smooth and creamy. Beat in eggs one at a time, then stir in vanilla extract. Gradually add flour and mix until just combined. Do not overmix.
- Step 3: In a separate saucepan, heat heavy cream over medium heat. Add caramel candies and stir until completely melted and smooth. Let cool slightly.
- Step 4: Pour half of the cheesecake batter into the prepared crust. Carefully spoon the caramel mixture over the cheesecake batter. Top with the remaining cheesecake batter, swirling gently to create a marbled effect.
- Step 5: Bake for 50-60 minutes, or until the cheesecake is set around the edges but still slightly jiggly in the center. Let cool completely on a wire rack before chilling in the refrigerator for at least 4 hours, or preferably overnight.
- Step 6: Carefully remove the springform pan sides before serving.
