Ingredients
- Ground beef: 1 pound
- Onion: 1/2 cup, chopped
- Cheddar cheese: 2 cups, shredded
- Burger buns: 2, finely chopped
- Tortillas (large, burrito size): 6
- Ketchup: 1/4 cup
- Mustard: 2 tablespoons
- Pickles: 1/4 cup, chopped
Instructions
- Step 1: Brown ground beef in a skillet over medium-high heat. Drain off any excess grease. Add chopped onion to the skillet and cook until softened, about 5 minutes.
- Step 2: Stir in ketchup, mustard, and chopped pickles into the beef mixture. Cook for another 2-3 minutes, stirring constantly.
- Step 3: Sprinkle half of the shredded cheddar cheese evenly over one side of each tortilla.
- Step 4: Spoon the beef mixture evenly over the cheese on each tortilla. Sprinkle the chopped burger buns on top of the beef.
- Step 5: Top with the remaining shredded cheddar cheese and fold the tortilla in half.
- Step 6: Cook each quesadilla in a lightly oiled skillet over medium heat for 3-4 minutes per side, or until golden brown and the cheese is melted and gooey. Cut into wedges and serve immediately.
Notes
- Refrigerate leftover quesadillas in an airtight container for up to 3 days.
- Reheat quesadillas in a skillet or toaster oven to maintain crispness, avoiding a soggy microwave result.
- Serve with extra ketchup, mustard, and a side of crispy french fries for the full cheeseburger experience.
- For extra flavor, toast the burger bun crumbs lightly before adding them to the quesadillas.
