Ingredients
- Ground Beef: 1 pound
- Taco Seasoning: 1 packet (1 ounce)
- Water: 1/2 cup
- Cheddar Cheese, shredded: 2 cups
- Monterey Jack Cheese, shredded: 1 cup
- Flour Tortillas: 8 large
- Vegetable Oil: 1 tablespoon
- Sour Cream: for serving (optional)
Instructions
- Step 1: In a large skillet, brown the ground beef over medium-high heat. Drain off any excess grease.
- Step 2: Stir in the taco seasoning and water. Bring to a simmer and cook for 5-7 minutes, or until the water has evaporated and the beef is well seasoned.
- Step 3: In a separate bowl, combine the shredded cheddar and Monterey Jack cheeses.
- Step 4: Lay out a tortilla on a flat surface. Sprinkle about 1/2 cup of the cheese mixture evenly over half of the tortilla. Top with about 1/2 cup of the seasoned ground beef. Sprinkle with another 1/4 cup of cheese. Fold the tortilla in half to form a quesadilla. Repeat with remaining tortillas, cheese, and beef.
- Step 5: Heat the vegetable oil in a large skillet over medium heat. Cook each quesadilla for 2-3 minutes per side, or until golden brown and the cheese is melted and gooey.
- Step 6: Remove the quesadillas from the skillet and let cool slightly. Cut into wedges and serve with sour cream, if desired.

- Store leftover quesadillas in an airtight container in the refrigerator for up to 3 days for best freshness.
- For a crispy reheat, warm quesadillas in a dry skillet or toaster oven instead of the microwave.
