Ingredients
- Frozen spinach, thawed and squeezed dry: 10 ounces
- Ricotta cheese: 15 ounces
- Eggs: 2 large
- Grated Parmesan cheese: 1/2 cup
- Shredded mozzarella cheese: 1 1/2 cups
- Garlic, minced: 2 cloves
- Italian seasoning: 1 teaspoon
- Salt and pepper: to taste
Instructions
- Step 1: Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
- Step 2: In a large bowl, combine the squeezed spinach, ricotta cheese, eggs, Parmesan cheese, minced garlic, Italian seasoning, salt, and pepper. Mix well until everything is evenly combined.
- Step 3: Spread half of the spinach mixture into the prepared baking dish. Sprinkle with 1/2 cup of the mozzarella cheese.
- Step 4: Spread the remaining spinach mixture evenly over the mozzarella cheese.
- Step 5: Top with the remaining 1 cup of mozzarella cheese.
- Step 6: Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly and the bake is heated through. Let stand for 5-10 minutes before serving.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Reheat individual portions in the microwave or bake in a low oven until warmed through.
- Serve this cheesy bake as a hearty side dish alongside roasted chicken or grilled sausage.
- Squeeze the thawed spinach really well – excess moisture can make the bake watery!
