Ingredients
- Boneless, skinless chicken breasts: 4, 6-ounce pieces
- Cooked ham slices: 4 slices
- Swiss cheese slices: 4 slices
- All-purpose flour: 1/2 cup
- Breadcrumbs: 1 cup, seasoned with salt, pepper, and garlic powder
- Eggs: 2, beaten
- Butter: 4 tablespoons
- Milk: 1/2 cup
- Swiss cheese, shredded: 1/2 cup
Instructions
- Step 1: Preheat oven to 375°F (190°C). Flatten each chicken breast to about 1/4 inch thickness using a meat mallet.
- Step 2: Layer one slice of ham and one slice of Swiss cheese on top of each chicken breast. Fold the chicken over the ham and cheese, securing with toothpicks if necessary.
- Step 3: Prepare three shallow dishes: one with flour, one with beaten eggs, and one with seasoned breadcrumbs. Dredge each chicken breast in flour, then dip in egg, and finally coat thoroughly with breadcrumbs.
- Step 4: Melt butter in a large skillet over medium heat. Sear the breaded chicken breasts for 2-3 minutes per side, until golden brown.
- Step 5: Transfer the seared chicken breasts to a baking dish and bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the cheese is melted.
- Step 6: While chicken is baking, make the Swiss cheese sauce: Melt 2 tablespoons of butter in a saucepan. Whisk in 2 tablespoons of flour and cook for 1 minute. Gradually whisk in milk until smooth. Bring to a simmer, then reduce heat and stir in shredded Swiss cheese until melted and smooth. Season with salt and pepper. Serve sauce over chicken.
Notes
- For best results, chill assembled cordon bleu for 30 minutes before breading to help it hold its shape.
- Reheat leftover cordon bleu in a 350°F (175°C) oven until warmed through to maintain crispiness.
