Instructions

  1. Step 1: In a large bowl, whisk together the Greek yogurt, lemon juice, olive oil, minced garlic, oregano, and salt.
  2. Step 2: Cut the chicken thighs into thin slices. Add the chicken to the marinade and toss to coat evenly. Cover the bowl and refrigerate for at least 2 hours, or preferably overnight.
  3. Step 3: Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  4. Step 4: Spread the marinated chicken in a single layer on the prepared baking sheet.
  5. Step 5: Bake for 20-25 minutes, or until the chicken is cooked through and lightly browned. Optionally, broil for the last 2-3 minutes for extra crispiness, watching carefully to prevent burning.
