- Greek yogurt 1 cup
- Lemon juice 1/4 cup

Instructions
- Step 1: In a large bowl, whisk together the Greek yogurt, lemon juice, olive oil, minced garlic, oregano, and salt.
- Step 2: Cut the chicken thighs into thin slices. Add the chicken to the marinade and toss to coat evenly. Cover the bowl and refrigerate for at least 2 hours, or preferably overnight.
- Step 3: Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Step 4: Spread the marinated chicken in a single layer on the prepared baking sheet.
- Step 5: Bake for 20-25 minutes, or until the chicken is cooked through and lightly browned. Optionally, broil for the last 2-3 minutes for extra crispiness, watching carefully to prevent burning.
- Step 6: Serve the chicken gyros in warm pita bread with your favorite toppings such as tzatziki sauce, tomatoes, onions, and lettuce.

- Store leftover cooked chicken in an airtight container in the refrigerator for up to 3 days.
- For best results, reheat the chicken in a skillet with a little olive oil over medium heat to restore some of its crispness.
