Ingredients
- **Chicken Sausage:** Choose your favorite variety. I personally love the Italian-style chicken sausage for its bold flavor, but any type will work. Make sure to use a good quality sausage for the best results.
- **Sweet Potatoes:** The star of the show! Look for firm, unblemished sweet potatoes with vibrant orange flesh. The smaller, more slender sweet potatoes tend to be sweeter and cook more evenly.
- **Honey:** The sweet nectar that binds everything together. Local honey is always a good choice, if you can find it.
- **Garlic:** Because everything is better with garlic. Freshly minced is always the way to go.
- **Soy Sauce (or Tamari for gluten-free):** Adds a savory, umami depth to the sauce.
- **Apple Cider Vinegar:** A touch of acidity to balance out the sweetness.
- **Olive Oil:** For sautéing and roasting.
- **Broth:** Chicken or vegetable broth will add moisture and flavor while cooking the sweet potatoes.
- **Salt and Pepper:** To taste. Don't be shy!
- **Optional Garnishes:** Sesame seeds, chopped green onions, or fresh parsley.
Instructions
- 1. **Preheat your oven to 400°F (200°C).** While the oven heats, prepare the ingredients.
- 2. **Peel and chop the sweet potatoes into bite-sized cubes.** Aim for roughly equal sizes so they cook evenly.
- 3. **Slice the chicken sausage into ½-inch thick rounds.** If you're using pre-cooked sausage, you can skip this step.
- 4. **In a large bowl, toss the sweet potatoes with olive oil, salt, and pepper.** Spread them in a single layer on a baking sheet.
- 5. **Roast the sweet potatoes for 15-20 minutes**, or until they are slightly tender.
- 6. **While the sweet potatoes are roasting, prepare the honey garlic sauce.** In a small bowl, whisk together the honey, minced garlic, soy sauce (or tamari), and apple cider vinegar.
- 7. **Remove the sweet potatoes from the oven and add the sliced chicken sausage to the baking sheet.** Drizzle the honey garlic sauce evenly over the sweet potatoes and sausage.
- 8. **Return the baking sheet to the oven and roast for another 10-15 minutes**, or until the chicken sausage is cooked through and the sweet potatoes are tender and caramelized.
- 9. **Remove from the oven and let cool slightly before serving.** Garnish with sesame seeds, chopped green onions, or fresh parsley, if desired.
Notes
- For best flavor, store leftovers in an airtight container in the refrigerator for up to 3 days.
- Reheat in a skillet over medium heat with a splash of broth to prevent drying, ensuring the sausage is thoroughly warmed.
- Serve over quinoa or rice to soak up every last drop of that delicious honey garlic sauce.
- To prevent sticking and promote caramelization, ensure the sweet potatoes are well-coated in olive oil before roasting.
