Delicious chickpea peach salad with honey lime dressing recipe with detailed instructions and nutritional information.

  • Total Time: 35 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 1 (15-ounce) can chickpeas, rinsed and drained
  • 2 ripe peaches, pitted and diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • 1 tablespoon honey
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Step 1: In a medium bowl, combine the rinsed and drained chickpeas, diced peaches, and thinly sliced red onion.
  2. Step 2: In a small bowl, whisk together the olive oil, lime juice, honey, salt, and pepper to make the honey-lime dressing.
  3. Step 3: Pour the honey-lime dressing over the chickpea and peach mixture. Gently toss to coat everything evenly.
  4. Step 4: Add the crumbled feta cheese and chopped cilantro to the salad. Gently toss again to combine.
  5. Step 5: Taste and adjust seasoning as needed, adding more honey for sweetness, lime juice for tang, or salt and pepper to taste.
  6. Step 6: Serve immediately or chill for later. The flavors will meld beautifully if chilled for at least 30 minutes.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 2 days; the flavors will deepen!
  • This salad is best served chilled, but if reheating is necessary, gently warm it in the microwave for short intervals, being mindful not to overcook the peaches.
  • Serve this vibrant salad alongside grilled chicken or fish for a complete and satisfying meal.
  • To enhance the peach's natural sweetness, consider briefly grilling or roasting the peach slices before adding them to the salad.
