Instructions
- Step 1: In a medium bowl, combine the rinsed and drained chickpeas, diced peaches, and thinly sliced red onion.
- Step 2: In a small bowl, whisk together the olive oil, lime juice, honey, salt, and pepper to make the honey-lime dressing.
- Step 3: Pour the honey-lime dressing over the chickpea and peach mixture. Gently toss to coat everything evenly.
- Step 4: Add the crumbled feta cheese and chopped cilantro to the salad. Gently toss again to combine.
- Step 5: Taste and adjust seasoning as needed, adding more honey for sweetness, lime juice for tang, or salt and pepper to taste.
