Ingredients
- All-purpose flour: 2 cups
- Unsalted butter: 1 cup (2 sticks), softened
- Granulated sugar: 3/4 cup
- Egg yolks: 2 large
- Vanilla extract: 1 teaspoon
- Salt: 1/4 teaspoon
- Milk: 1 tablespoon (optional, for brushing)
- Coarse sugar: for sprinkling (optional)
Instructions
- Step 1: In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. This can be done using a stand mixer or an electric hand mixer.
- Step 2: Beat in the egg yolks one at a time, then stir in the vanilla extract and salt.
- Step 3: Gradually add the flour to the wet ingredients, mixing until just combined. Be careful not to overmix the dough.
- Step 4: Wrap the dough in plastic wrap and chill in the refrigerator for at least 30 minutes.
- Step 5: Preheat oven to 350°F (175°C). On a lightly floured surface, roll out the dough to about 1/4 inch thickness. Use cookie cutters to cut out desired shapes. Place the cookies onto ungreased baking sheets or baking sheets lined with parchment paper.
- Step 6: If desired, brush the tops of the cookies with milk and sprinkle with coarse sugar. Bake for 10-12 minutes, or until the edges are lightly golden brown. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
