Instructions

  1. Step 1: Preheat oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, 1/4 cup granulated sugar, and melted butter. Press mixture firmly into the bottom of a 9-inch pie plate. Bake for 8-10 minutes, or until lightly golden. Let cool completely.
  2. Step 2: In a large saucepan, whisk together 1 1/2 cups granulated sugar, cornstarch, and salt. Gradually whisk in lemon juice until smooth. Cook over medium heat, stirring constantly, until the mixture comes to a boil and thickens, about 5-7 minutes.
