- 1 avocado, diced
- 1/2 cup chopped cilantro
- 1/2 cup lime juice
Instructions
- Step 1: In a large bowl, combine the black beans, corn, red bell pepper, red onion, and jalapeno (if using).
- Step 2: Gently stir in the thawed frozen corn, avocado, and cilantro.
- Step 3: Pour the lime juice over the mixture and stir to combine.
- Step 4: Season with salt and pepper to taste. Adjust lime juice to desired tartness.
- Step 5: Cover and refrigerate for at least 30 minutes to allow the flavors to meld. This step is optional, but recommended.
