- Pasta (spaghetti, linguine, or your favorite): 8 ounces
- Ripe Avocados: 2 medium
- Fresh Basil Leaves: 1/4 cup, packed
- Garlic: 2 cloves
- Lemon Juice: 2 tablespoons
- Olive Oil: 2 tablespoons
- Parmesan Cheese: 1/4 cup, grated
- Salt and Black Pepper: to taste
Instructions
- Step 1: Cook the pasta according to package directions until al dente. Reserve about 1/2 cup of pasta water before draining.
- Step 2: While the pasta is cooking, prepare the avocado sauce. In a food processor or blender, combine the avocados, basil, garlic, lemon juice, olive oil, parmesan cheese, salt, and pepper.
- Step 3: Blend until smooth and creamy. If the sauce is too thick, add a tablespoon or two of the reserved pasta water until it reaches your desired consistency.
- Step 4: Once the pasta is drained, return it to the pot. Pour the avocado sauce over the pasta and toss to coat evenly. Add more pasta water if needed to make the sauce creamier.
- Step 5: Serve immediately, garnished with extra parmesan cheese and fresh basil leaves, if desired.

- To prevent the avocado sauce from browning, press plastic wrap directly onto the surface before refrigerating for up to a day.
- For best results when reheating, gently toss the pasta with a splash of olive oil and a little extra parmesan to revive the creamy texture.
