- 1/2 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 cup chopped fresh parsley (optional)
- 1 tablespoon balsamic glaze (optional)
Instructions
- Step 1: Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Step 2: Roughly chop the carrots into 2-inch pieces. Place them in a large bowl.
- Step 3: Drizzle carrots with olive oil, then sprinkle with salt, pepper, garlic powder, and onion powder. Toss to coat evenly.
- Step 4: Arrange carrots in a single layer on the prepared baking sheet. Using the bottom of a glass or small skillet, firmly smash each carrot to about 1/2-inch thickness. This will help them crisp up.
- Step 5: Roast for 20-25 minutes, flipping halfway through, until carrots are tender and slightly caramelized.
- Step 6: Garnish with fresh parsley and balsamic glaze (if using) before serving.

- Store leftover crispy smashed carrots in an airtight container in the refrigerator for up to 3 days.
- Reheat gently in a skillet over medium heat for a few minutes to restore their crispiness.
