- Vegetable oil for frying (about 2 cups)
- Cinnamon sugar for coating (1/4 cup sugar + 1 tablespoon cinnamon)
Instructions
- Step 1: Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. In a large bowl, whisk together flour, baking powder, salt, and cinnamon.
- Step 2: In a separate bowl, whisk together milk, eggs, oil, and vanilla extract. Gradually add the wet ingredients to the dry ingredients, whisking until just combined. Do not overmix. The batter will be slightly lumpy.
- Step 3: Drop rounded tablespoons of batter onto the prepared baking sheet, leaving some space between each bite.
- Step 4: Bake for 12-15 minutes, or until golden brown and cooked through. Let the churro bites cool slightly on the baking sheet before transferring them to a wire rack to cool completely.
- Step 5: While the churro bites are still warm, toss them in the cinnamon sugar mixture to coat evenly.
- Step 6: Serve warm and enjoy! These are delicious on their own or with a side of chocolate sauce or caramel dipping sauce.
