Ingredients
- Chicken breasts: 2 medium
- Yukon Gold potatoes: 1.5 lbs
- Heavy cream: 1.5 cups
- Parmesan cheese (grated): 1 cup
- Garlic: 4 cloves
- Fettuccine pasta: 1 lb
- Olive oil: 4 tablespoons
- Butter: 2 tablespoons
Instructions
- Step 1: Preheat oven to 400°F (200°C). Cut potatoes into 1-inch cubes, toss with 2 tablespoons olive oil, salt, and pepper. Spread on a baking sheet and bake for 25-30 minutes, or until golden brown and crispy, flipping halfway through.
- Step 2: While potatoes are baking, prepare the chicken. Cut chicken breasts in half horizontally to create thinner cutlets. Season both sides with salt, pepper, and garlic powder. Heat remaining 2 tablespoons of olive oil in a large skillet over medium-high heat. Sear chicken for 4-5 minutes per side, or until cooked through and golden brown. Remove from skillet and set aside.
- Step 3: Cook fettuccine pasta according to package directions until al dente. Reserve 1 cup of pasta water before draining.
- Step 4: In the same skillet used for the chicken, melt butter over medium heat. Add minced garlic and cook for 1 minute, or until fragrant. Pour in heavy cream and bring to a simmer. Reduce heat to low and stir in 3/4 cup of Parmesan cheese until melted and smooth.
- Step 5: Add cooked pasta to the Alfredo sauce and toss to coat. If the sauce is too thick, add a little reserved pasta water until desired consistency is reached. Season with salt and pepper to taste.
- Step 6: Slice the chicken and arrange on top of the pasta. Sprinkle with remaining Parmesan cheese and serve immediately with crispy potatoes on the side.
Notes
- Store leftover Alfredo and pasta separately from the potatoes to prevent them from getting soggy.
- Gently reheat the Alfredo pasta with a splash of milk or cream over low heat to restore its creamy texture.
- Garnish with freshly chopped parsley and a squeeze of lemon juice for added brightness and flavor.
- For extra crispy potatoes, ensure they are spaced evenly on the baking sheet and lightly pat them dry before tossing with oil.
