Ingredients

  • Chicken breasts: 2 medium
  • Yukon Gold potatoes: 1.5 lbs
  • Heavy cream: 1.5 cups
  • Parmesan cheese (grated): 1 cup
  • Garlic: 4 cloves
  • Fettuccine pasta: 1 lb
  • Olive oil: 4 tablespoons
  • Butter: 2 tablespoons

Instructions

  1. Step 1: Preheat oven to 400°F (200°C). Cut potatoes into 1-inch cubes, toss with 2 tablespoons olive oil, salt, and pepper. Spread on a baking sheet and bake for 25-30 minutes, or until golden brown and crispy, flipping halfway through.
  2. Step 2: While potatoes are baking, prepare the chicken. Cut chicken breasts in half horizontally to create thinner cutlets. Season both sides with salt, pepper, and garlic powder. Heat remaining 2 tablespoons of olive oil in a large skillet over medium-high heat. Sear chicken for 4-5 minutes per side, or until cooked through and golden brown. Remove from skillet and set aside.
  3. Step 3: Cook fettuccine pasta according to package directions until al dente. Reserve 1 cup of pasta water before draining.
  4. Step 4: In the same skillet used for the chicken, melt butter over medium heat. Add minced garlic and cook for 1 minute, or until fragrant. Pour in heavy cream and bring to a simmer. Reduce heat to low and stir in 3/4 cup of Parmesan cheese until melted and smooth.
  5. Step 5: Add cooked pasta to the Alfredo sauce and toss to coat. If the sauce is too thick, add a little reserved pasta water until desired consistency is reached. Season with salt and pepper to taste.
  6. Step 6: Slice the chicken and arrange on top of the pasta. Sprinkle with remaining Parmesan cheese and serve immediately with crispy potatoes on the side.
