Bake rich, fudgy brownies quickly from a mix, then top with a cloud of marshmallow fluff and snowy coconut. This Easy Sno Ball recipe requires serious cooling time for that perfect marshmallow layer.

  • Total Time: 35 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 1 (18 oz) box favorite chocolate brownie mix
  • 2 large eggs
  • 1/4 cup vegetable oil
  • 1/4 cup water
  • 7 oz jar marshmallow creme (or fluff)
  • 1/2 cup powdered sugar
  • 1 teaspoon alcohol-free vanilla extract
  • 2 cups sweetened shredded coconut

Instructions

  1. Step 1: Preheat the oven to 350°F (175°C) and lightly grease or line an 8×8 inch baking pan with parchment paper. Prepare the brownie mix according to the package directions, combining the mix, eggs, oil, and water until just mixed. Pour the batter into the prepared pan and bake for 30 to 35 minutes, or until a toothpick inserted near the center comes out with moist crumbs.
  2. Step 2: Remove the brownies from the oven and allow them to cool completely in the pan, which will take approximately 1 to 2 hours. The brownies must be fully cooled before applying the topping.
  3. Step 3: Prepare the sno ball topping by combining the marshmallow creme, powdered sugar, and alcohol-free vanilla extract in a medium bowl. Beat the mixture with an electric mixer on medium speed for about 1 minute until the topping is smooth and stiff enough to spread.
  4. Step 4: Once the brownies are cool, use an offset spatula to spread the marshmallow topping evenly across the surface of the baked brownies, ensuring all edges are covered.
  5. Step 5: Gently press the sweetened shredded coconut onto the marshmallow topping until the entire surface is coated. Cover the pan and refrigerate the brownies for at least 30 minutes to set the topping before slicing and serving.

Notes

  • Keep these brownies covered in the refrigerator for up to 4 days; the chilled topping helps maintain the iconic "sno ball" structure.
  • Since the marshmallow creme topping is heat sensitive, serve these exclusively at room temperature or chilled, and avoid attempting to warm the slices.
  • For an extra decadent treat, serve slices alongside a scoop of vanilla ice cream or a drizzle of melted dark chocolate.
  • If you chill your offset spatula slightly before spreading the marshmallow mixture, you will achieve a smoother, cleaner layer on the cooled brownie surface.
