- 2 cups cooked long-grain rice (day-old is best)
- 4 large eggs, lightly beaten
- 1 tablespoon vegetable oil
- 1/2 cup chopped onion
- 1 cup chopped carrots
- 1 cup frozen peas
- 1/2 cup chopped cooked chicken or pork (optional)
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce (optional)
- 1 teaspoon sesame oil
Instructions
- Step 1: Heat 1 tablespoon of vegetable oil in a wok or large skillet over medium-high heat. Add the beaten eggs and scramble until cooked through. Remove the eggs from the wok and set aside.
- Step 2: Add the remaining 1 tablespoon of vegetable oil to the wok. Add the onion and carrots and stir-fry for 2-3 minutes until slightly softened. Add the peas and cooked chicken/pork (if using) and stir-fry for another minute.
- Step 3: Add the cooked rice to the wok. Break up any clumps with a spatula. Stir-fry for 2-3 minutes, allowing the rice to heat through and become slightly crispy.
- Step 4: Add the soy sauce and oyster sauce (if using) to the wok. Stir-fry for another minute to combine the flavors and coat the rice evenly. Stir in the sesame oil.
- Step 5: Add the scrambled eggs back to the wok and gently toss everything together. Taste and adjust seasonings as needed (add more soy sauce if desired).
- Step 6: Serve immediately and garnish with chopped green onions (optional).
Notes
- Store leftover fried rice in an airtight container in the refrigerator for up to 3 days.
- Reheat gently in a skillet or microwave, adding a splash of water or soy sauce to prevent dryness.
