Savor this deeply flavored casserole! Tender chicken and earthy cremini mushrooms are coated in a rich, garlicky cream sauce, started quickly on the stovetop and finished at 375°F.

  • Total Time: 35 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken breast, cubed
  • 8 oz sliced cremini mushrooms
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 (10.5 oz) can cream of mushroom soup
  • 1/2 cup chicken broth
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon dried Italian seasoning

Instructions

  1. Step 1: Preheat the oven to 375°F (190°C) and lightly grease a 9×13 inch casserole dish. In a large skillet, heat the olive oil over medium heat. Sauté the cubed chicken until lightly browned on all sides, then remove the chicken and set it aside.
  2. Step 2: Add the sliced mushrooms to the same skillet and cook until softened (about 5 minutes). Stir in the minced garlic and Italian seasoning, cooking for 1 minute until fragrant.
  3. Step 3: In a medium bowl, whisk together the cream of mushroom soup and chicken broth until smooth. Gently fold in the cooked chicken and the mushroom mixture, then season well with salt and pepper to taste.
  4. Step 4: Pour the entire chicken and mushroom mixture into the prepared casserole dish, spreading it evenly across the bottom. Bake uncovered for 25 minutes.
  5. Step 5: Remove the casserole from the oven, sprinkle the shredded mozzarella cheese evenly over the top, and return to the oven for an additional 5-10 minutes, or until the cheese is melted and bubbly and the casserole is heated through.

Notes

  • For enhanced flavor depth, ensure the mushrooms are fully cooked down and have released their liquid before adding the garlic; this step prevents a watery casserole base.
  • To create a balanced, satisfying plate, serve hefty portions of this rich casserole over buttery egg noodles or fluffy rice, complemented by a simple lemon-dressed side salad.
  • When reheating the full casserole, add a tablespoon of chicken broth or milk around the edges and cover with foil to ensure moisture retention while baking at 325°F until piping hot.
  • For easy make-ahead meal prep, assemble the casserole completely (minus the mozzarella topping), cover tightly, and freeze for up to three months; thaw overnight before baking as directed.
