Instructions
- Step 1: Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Step 2: In a large bowl, toss the carrots with olive oil, minced garlic, oregano, salt, and pepper. Ensure carrots are evenly coated.
- Step 3: Spread the carrots in a single layer on the prepared baking sheet.
- Step 4: Roast for 20 minutes, then remove from the oven and sprinkle with grated Parmesan cheese.
- Step 5: Return the baking sheet to the oven and roast for another 5-10 minutes, or until the carrots are tender and the cheese is melted and slightly golden.
- Step 6: Garnish with fresh chopped parsley before serving.
