- 1/2 cup rolled oats
- 1/2 cup brown sugar
- 1/4 cup unsalted butter, melted
- 1/4 cup pineapple juice
- 1 large egg
- 1 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 2 ripe peaches, peeled and diced
- 1/4 cup chopped pecans (optional)
Instructions
- Step 1: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. In a medium bowl, whisk together the flour, oats, brown sugar, baking powder, and cinnamon.
- Step 2: In a separate bowl, whisk together the melted butter, pineapple juice, and egg until well combined.
- Step 3: Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix. Gently fold in the diced peaches and pecans (if using).
- Step 4: Drop rounded tablespoons of the batter onto the prepared baking sheet, leaving some space between each bar.
- Step 5: Bake for 12-15 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean.
- Step 6: Let the bars cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
- Store these bars in an airtight container at room temperature for up to 3 days, or freeze them for longer storage.
- For a warm, gooey treat, gently reheat individual bars in the microwave for 10-15 seconds.
