Ingredients
- Feta cheese block, 8 ounces
- Cherry tomatoes, 1 pint
- Kalamata olives, pitted, 1/2 cup
- Cucumber, 1 medium
- Red onion, 1/4 medium
- Fresh oregano, 2 tablespoons chopped
- Extra virgin olive oil, 3 tablespoons
- Red wine vinegar, 1 tablespoon
Instructions
- Step 1: Slice the cucumber into 1/4-inch thick rounds. Thinly slice the red onion. Halve the cherry tomatoes.
- Step 2: In a medium bowl, combine the sliced cucumber, halved cherry tomatoes, sliced red onion, and Kalamata olives.
- Step 3: Gently toss the vegetables with the chopped fresh oregano, extra virgin olive oil, and red wine vinegar.
- Step 4: On a serving plate, place the block of feta cheese.
- Step 5: Spoon the vegetable mixture over the top of the feta cheese, creating a "tower" effect. Drizzle any remaining olive oil from the bowl over the salad.
- Step 6: Serve immediately or chill briefly before serving.
Notes
- To prevent the feta from getting soggy, add the vegetable mixture just before serving.
- For optimal flavor, avoid reheating; this salad is best enjoyed fresh and vibrant.
- Serve this tower as a show-stopping appetizer or a light and refreshing lunch option.
- Try using a vegetable peeler to create long, thin ribbons of cucumber for a more elegant look.
