- 1 lb ground beef
- 1 packet taco seasoning
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (15 ounce) can corn, drained
- 1 cup shredded cheddar cheese
- 6 corn tostadas
- 1/2 cup chopped red onion
- 1/4 cup chopped cilantro
Instructions
- Step 1: Brown the ground beef in a large skillet over medium-high heat. Drain off any excess grease.
- Step 2: Stir in the taco seasoning and cook for 1 minute more, stirring constantly.
- Step 3: Add the black beans and corn to the skillet and heat through.
- Step 4: Warm the tostadas according to package directions.
- Step 5: Top each tostada with the beef mixture, shredded cheese, red onion, and cilantro.
- Step 6: Serve immediately and enjoy!
Notes
- Store leftover tostadas in an airtight container in the refrigerator for up to 3 days.
- For perfectly crisp reheated tostadas, briefly microwave them with a damp paper towel over them to add moisture.
