Ingredients

  • 1 packet taco seasoning
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can corn, drained
  • 1 cup shredded cheddar cheese
  • 6 corn tostadas
  • 1/2 cup chopped red onion
  • 1/4 cup chopped cilantro

Instructions

  1. Step 1: Brown the ground beef in a large skillet over medium-high heat. Drain off any excess grease.
  2. Step 2: Stir in the taco seasoning and cook for 1 minute more, stirring constantly.
  3. Step 3: Add the black beans and corn to the skillet and heat through.
  4. Step 4: Warm the tostadas according to package directions.
  5. Step 5: Top each tostada with the beef mixture, shredded cheese, red onion, and cilantro.
  6. Step 6: Serve immediately and enjoy!
