Ingredients
- Ground turkey: 1 pound
- Bell peppers (various colors), sliced: 2 cups
- Onion, chopped: 1 medium
- Garlic, minced: 2 cloves
- Soy sauce: 3 tablespoons
- Sesame oil: 1 tablespoon
- Cornstarch: 1 tablespoon
- Brown sugar: 1 tablespoon
Instructions
- Step 1: In a large skillet or wok, heat sesame oil over medium-high heat. Add ground turkey and cook, breaking it apart with a spoon, until browned. Drain any excess grease.
- Step 2: Add chopped onion and minced garlic to the skillet. Cook for about 2-3 minutes, until the onion is softened.
- Step 3: Add the sliced bell peppers to the skillet. Stir-fry for about 5-7 minutes, until the peppers are tender-crisp.
- Step 4: In a small bowl, whisk together soy sauce, cornstarch, and brown sugar until the cornstarch is dissolved.
- Step 5: Pour the soy sauce mixture over the ground turkey and vegetables. Stir-fry for 1-2 minutes, until the sauce thickens and coats the ingredients.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- For best results, reheat the stir-fry in a skillet over medium heat, adding a splash of water if needed to prevent sticking.
- Serve over steamed rice or quinoa for a complete and satisfying meal.
- For extra flavor, consider adding a pinch of red pepper flakes or a dash of sriracha to the soy sauce mixture.
