Ingredients
Scale
- 4 boneless, skinless chicken breasts (pounded to 1/2-inch thickness)
- 1 cup freshly grated Parmesan cheese (divided)
- 1/2 cup mayonnaise (full-fat recommended)
- 1/2 cup shredded mozzarella cheese
- 1 teaspoon garlic powder
- 1/2 teaspoon Italian seasoning
- 1/4 cup Panko breadcrumbs
- Salt and freshly ground black pepper (to taste)
Instructions
- Step 1: Preheat the oven to 375°F (190°C). Lightly grease a medium baking dish and arrange the seasoned chicken breasts inside. Ensure the breasts do not overlap.
- Step 2: In a medium bowl, combine the mayonnaise, mozzarella cheese, 3/4 cup of the Parmesan cheese, garlic powder, and Italian seasoning. Season the mixture with a pinch of salt and pepper, stirring until thoroughly combined into a thick paste.
- Step 3: Scoop the Parmesan-mayo mixture evenly over the tops of the chicken breasts. Use the back of a spoon or spatula to spread the mixture thickly, ensuring the entire top surface of the chicken is covered.
- Step 4: In a small separate bowl, toss the Panko breadcrumbs with the remaining 1/4 cup of Parmesan cheese. Sprinkle this mixture lightly over the tops of the coated chicken breasts to form a crispy crust layer.
- Step 5: Bake the chicken for 20 to 25 minutes, or until the internal temperature reaches 165°F (74°C) and the chicken is fully cooked. For a golden, bubbling crust, switch the oven to the broiler setting and broil for 1 to 2 minutes (watching carefully to prevent burning) before serving.
Notes
- For maximum crispiness, firmly press the Panko-Parmesan topping onto the mayo paste before baking, and make sure to use the quick broiler finish for that perfect golden bubble.
- Balance the richness of the topping by serving this decadent chicken alongside a simple, bright side like roasted lemon asparagus or a fresh, crisp garden salad.
- Keep any cooled leftovers tightly sealed in the refrigerator for up to three days, understanding that the signature crispy topping will soften once chilled.
- To maintain a semblance of the initial crunch, avoid the microwave; instead, warm portions in a 300°F oven or air fryer until heated through.
