Ingredients
- All-purpose flour: 1 1/2 cups
- Powdered sugar: 1/2 cup
- Cold unsalted butter, cut into cubes: 1/2 cup (1 stick)
- Granulated sugar: 1 cup
- Large eggs: 3
- Fresh lemon juice: 1/2 cup
- Lemon zest: 2 tablespoons
- Culinary lavender buds: 1 teaspoon
Instructions
- Step 1: Preheat oven to 350°F (175°C). Grease and flour an 8×8 inch baking pan.
- Step 2: In a medium bowl, whisk together flour and powdered sugar. Cut in cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs. Press mixture firmly into the bottom of the prepared pan.
- Step 3: Bake the crust for 18-20 minutes, or until lightly golden.
- Step 4: While the crust is baking, prepare the filling. In a separate bowl, whisk together granulated sugar, eggs, lemon juice, lemon zest, and culinary lavender buds until well combined.
- Step 5: Pour the lemon filling over the hot crust. Bake for an additional 20-25 minutes, or until the filling is set but still slightly jiggly in the center.
- Step 6: Let the lemon bars cool completely in the pan before cutting into squares. Dust with powdered sugar before serving, if desired.
Notes
- Store leftover lemon bars in an airtight container in the refrigerator for up to 3 days to maintain their tangy freshness.
- If you prefer a slightly warmer bar, microwave individual slices for about 10-15 seconds, being careful not to overheat and melt the filling.
- Serve these delightful bars chilled or at room temperature alongside a cup of Earl Grey tea to complement the floral notes.
- For a more pronounced lavender flavor, gently rub the lavender buds between your fingers before adding them to the filling, releasing their aromatic oils.
