Ingredients
- Fresh green beans: 1 pound
- Olive oil: 2 tablespoons
- Garlic: 3 cloves, minced
- Lemon juice: 2 tablespoons
- Lemon zest: 1 teaspoon
- Parmesan cheese: 1/4 cup, grated
- Salt: 1/2 teaspoon
- Black pepper: 1/4 teaspoon
Instructions
- Step 1: Trim the ends of the green beans and rinse them thoroughly.
- Step 2: Heat olive oil in a large skillet over medium heat. Add the minced garlic and cook until fragrant, about 30 seconds, being careful not to burn it.
- Step 3: Add the green beans to the skillet and cook, stirring occasionally, for 5-7 minutes, or until they are crisp-tender.
- Step 4: Stir in the lemon juice, lemon zest, salt, and pepper. Cook for another minute to combine the flavors.
- Step 5: Remove from heat and sprinkle with grated Parmesan cheese. Toss to coat.
- Step 6: Serve immediately and enjoy.
Notes
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
- To reheat, quickly sauté the green beans in a pan with a touch more olive oil to restore their crispness.
- This dish makes a lovely side for grilled chicken, fish, or pasta dishes.
- Don't overcook the garlic – fragrant is good, burnt is bitter!
