- 2 boneless, skinless chicken breasts (6–8 ounces each)
- 1/2 cup all-purpose flour
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 large eggs, beaten
- 1 cup Italian seasoned bread crumbs
- 1/2 cup grated Parmesan cheese
- 4 tablespoons olive oil, divided
- 1 cup marinara sauce
- 1/2 cup shredded mozzarella cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Step 1: Preheat oven to 375°F (190°C). Prepare the chicken by pounding the chicken breasts to an even 1/2-inch thickness.
- Step 2: In a shallow dish, combine the flour, garlic powder, salt, and pepper. In a second shallow dish, place the beaten eggs. In a third shallow dish, combine the bread crumbs and Parmesan cheese.
- Step 3: Dredge each chicken breast in the flour mixture, then dip in the egg mixture, and finally coat thoroughly with the bread crumb mixture.
- Step 4: Heat 2 tablespoons of olive oil in a large oven-safe skillet over medium-high heat. Add the chicken breasts and cook for 3-4 minutes per side, until golden brown.
- Step 5: Remove the skillet from the heat and pour the marinara sauce over the chicken. Sprinkle with mozzarella cheese.
- Step 6: Bake in the preheated oven for 15-20 minutes, or until the chicken is cooked through and the cheese is melted and bubbly. Garnish with fresh parsley before serving.
