Ingredients

  • Graham crackers: 1 1/2 cups crushed

Instructions

  1. Step 1: Preheat oven to 350°F (175°C). Combine graham cracker crumbs and melted butter. Press into the bottom of a 9-inch springform pan. Bake for 8 minutes.
  2. Step 2: In a large bowl, beat softened cream cheese and sugar until smooth and creamy. Beat in eggs one at a time, then stir in lemon zest and heavy cream.
  3. Step 3: In a separate small bowl, gently warm the raspberry jam in the microwave or on the stovetop until it is easily pourable.
  4. Step 4: Pour cream cheese mixture over the baked crust. Spoon dollops of raspberry jam over the cream cheese layer. Swirl the jam into the cheesecake filling using a knife or skewer.
