Ingredients
Scale
- 4 boneless, skinless chicken breasts
- 1/4 cup olive oil
- 2 tablespoons dried oregano
- 1 tablespoon dried thyme
- 1 tablespoon dried basil
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup grated Parmesan cheese (optional)
Instructions
- Step 1: Preheat your grill to medium-high heat. Lightly oil the grill grates to prevent sticking.
- Step 2: In a small bowl, combine olive oil, oregano, thyme, basil, garlic powder, salt, and pepper. Mix well.
- Step 3: Place the chicken breasts in a shallow dish and pour the herb mixture over them, ensuring both sides are evenly coated. If using, sprinkle Parmesan cheese over the chicken.
- Step 4: Grill the chicken for approximately 6-8 minutes per side, or until the internal temperature reaches 165°F (74°C). Use a meat thermometer to ensure it's cooked through.
- Step 5: Remove the chicken from the grill and let it rest for 5 minutes before slicing and serving. This allows the juices to redistribute, resulting in more tender chicken.
Notes
- Store leftover chicken in an airtight container in the refrigerator for up to 3 days.
- Reheat gently in a skillet over medium-low heat or in the microwave, adding a splash of olive oil to prevent drying.
- Serve this delicious chicken over a bed of couscous or quinoa with a side of roasted vegetables for a complete Mediterranean meal.
- For extra flavor, marinate the chicken in the herb mixture for at least 30 minutes before grilling, allowing the herbs to infuse the meat.
