- 4 cups cubed cantaloupe or honeydew melon, chilled
- 1 cup heavy cream
- 1/2 cup granulated sugar
- 1/4 cup whole milk
- 1 tablespoon lemon juice
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
Instructions
- Step 1: Puree the chilled melon in a blender or food processor until completely smooth.
- Step 2: In a separate bowl, whisk together the heavy cream, sugar, milk, lemon juice, salt, and vanilla extract until the sugar is dissolved.
- Step 3: Combine the pureed melon with the cream mixture and stir well to combine.
- Step 4: Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions. This usually takes about 20-25 minutes.
- Step 5: Transfer the soft-serve ice cream to an airtight container and freeze for at least 2 hours to harden before serving.
Notes
- To prevent ice crystals, press a sheet of plastic wrap directly onto the surface of the ice cream before freezing.
- If your ice cream gets too hard, let it sit at room temperature for a few minutes before scooping.
- Garnish each serving with fresh mint sprigs and a few extra melon cubes for an elegant presentation.
- For a more intense melon flavor, chill the pureed melon mixture in the fridge for at least 30 minutes before churning.
