Ingredients

  • Chocolate Lasagna Noodles: 9 sheets
  • Heavy Cream: 4 cups
  • Powdered Sugar: 1/2 cup
  • Mint Extract: 1 teaspoon
  • Green Food Coloring: 2-3 drops
  • Mini Chocolate Chips: 1 cup
  • Whipped Cream: 1 container (8 oz)
  • Chocolate Shavings: For garnish

Instructions

  1. Step 1: Cook lasagna noodles according to package directions. Drain and rinse with cold water to prevent sticking. Lay flat on parchment paper.
  2. Step 2: In a large bowl, whip the heavy cream with an electric mixer until soft peaks form. Gradually add the powdered sugar and continue whipping until stiff peaks form.
  3. Step 3: Divide the whipped cream mixture into two bowls. In one bowl, add the mint extract and green food coloring. Gently fold in half of the mini chocolate chips.
  4. Step 4: In a 9×13 inch dish, spread a thin layer of the plain whipped cream. Layer three lasagna noodles on top. Spread the mint chocolate chip whipped cream mixture evenly over the noodles.
  5. Step 5: Add another layer of three lasagna noodles. Top with the remaining plain whipped cream. Layer the final three lasagna noodles on top.
  6. Step 6: Frost the top layer with whipped cream from the container. Sprinkle with the remaining mini chocolate chips and chocolate shavings. Refrigerate for at least 2 hours before serving.
