Ingredients
Scale
- 1 pound ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 (28 ounce) can crushed tomatoes
- 1 (15 ounce) can tomato sauce
- 4 cups beef broth
- 8 ounces lasagna noodles, broken into pieces
- 1 teaspoon Italian seasoning
Instructions
- Step 1: Brown the ground beef in a large pot over medium-high heat. Drain off any excess grease.
- Step 2: Add the chopped onion and minced garlic to the pot and cook until softened, about 3-5 minutes.
- Step 3: Stir in the crushed tomatoes, tomato sauce, beef broth, Italian seasoning, salt, and pepper. Bring to a simmer.
- Step 4: Add the broken lasagna noodles to the pot and cook until the noodles are tender, about 15-20 minutes, stirring occasionally to prevent sticking.
- Step 5: Stir in ricotta cheese (optional). Serve immediately, garnished with parmesan cheese and fresh basil, if desired.
Notes
- Store leftover soup in an airtight container in the refrigerator for up to 3 days.
- For best results, reheat gently on the stovetop over medium heat, adding a splash of broth if needed to loosen the soup.
- A dollop of ricotta cheese stirred in right before serving elevates this cozy soup to lasagna-like perfection!
- Don't overcook the noodles; aim for al dente as they'll continue to soften in the hot soup.
