- 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 lb penne pasta
- 1 red bell pepper, chopped
- 1/2 cup red onion, chopped
- 1 1/2 cups chicken broth
- 1 cup tangy BBQ sauce (store-bought or homemade)
- 1/4 cup honey
- 1 tbsp olive oil
Instructions
- Step 1: Preheat oven to 400°F (200°C). In a large bowl, toss the chicken pieces with olive oil, salt, and pepper.
- Step 2: In a large oven-safe skillet or baking dish, combine the penne pasta, chopped bell pepper, and chopped red onion.
- Step 3: Spread the chicken evenly over the pasta and vegetables. Pour in the chicken broth, BBQ sauce, and honey. Stir well to ensure the pasta is submerged in the liquid.
- Step 4: Cover the skillet tightly with aluminum foil and bake for 30 minutes.
- Step 5: Remove the foil and bake for another 10-15 minutes, or until the pasta is cooked through and the chicken is cooked to an internal temperature of 165°F (74°C).
- Step 6: Let the dish rest for a few minutes before serving. Stir well before serving to distribute the sauce evenly.
