Ingredients
- Rolled Oats: 1/2 cup
- Milk (dairy or non-dairy): 1 cup
- Greek Yogurt: 1/4 cup
- Chia Seeds: 1 tablespoon
- Honey or Maple Syrup: 1 tablespoon
- Vanilla Extract: 1/2 teaspoon
- Diced Peaches: 1/2 cup, fresh or frozen
- Ground Cinnamon: 1/4 teaspoon
Instructions
- Step 1: In a jar or container with a lid, combine the rolled oats, milk, Greek yogurt, chia seeds, honey (or maple syrup), and vanilla extract. Stir well to ensure everything is evenly distributed.
- Step 2: Add the diced peaches to the oat mixture. Gently stir them in, making sure they are distributed throughout.
- Step 3: Sprinkle the ground cinnamon over the peach and oat mixture.
- Step 4: Seal the jar or container tightly with the lid.
- Step 5: Place the jar in the refrigerator and let it sit overnight, or for at least 4-6 hours, to allow the oats to soften and the flavors to meld.
- Step 6: In the morning, stir well before eating. If the oats are too thick, add a splash more milk. Enjoy cold straight from the jar!
Notes
- Store leftover overnight oats in an airtight container in the fridge for up to 2 days, but they're best enjoyed fresh.
- If you prefer a warm cobbler experience, microwave for 30-60 seconds, stirring halfway through.
- Top with a dollop of whipped cream or a sprinkle of granola for added texture and indulgence.
- For a creamier texture, blend half the peaches before mixing them in, leaving some chunks for that classic cobbler feel.
