Delicious peanut butter oatmeal cookies recipe recipe with detailed instructions and nutritional information.

  • Total Time: 35 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 1 cup creamy peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups rolled oats (old-fashioned or quick-cooking)
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Step 1: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Step 2: In a large bowl, cream together the peanut butter, granulated sugar, and brown sugar until smooth and creamy. Beat in the egg and vanilla extract until well combined.
  3. Step 3: In a separate bowl, whisk together the rolled oats, flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  4. Step 4: Drop rounded tablespoons of cookie dough onto the prepared baking sheet, leaving about 2 inches between each cookie.
  5. Step 5: Bake for 8-10 minutes, or until the edges are lightly golden brown. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • Store these cookies in an airtight container at room temperature for up to a week, or freeze them for longer storage.
  • For a warm, gooey treat, gently reheat a cookie in the microwave for 5-10 seconds.
  • Serve these cookies alongside a tall glass of cold milk for the ultimate comfort food experience.
  • To prevent the cookies from spreading too thin, chill the cookie dough for 30 minutes before baking.
