Ingredients
Scale
- 2 cups fresh pineapple chunks, well-drained
- 1 cup heavy cream
- 1 cup whole milk
- 3/4 cup granulated sugar
- 1/4 cup light corn syrup
- 1/4 teaspoon salt
- 1 tablespoon lemon juice (optional, for brightness)
Instructions
- Step 1: Combine the pineapple chunks, heavy cream, whole milk, granulated sugar, corn syrup, and salt in a blender or food processor. Blend until completely smooth.
- Step 2: Stir in the lemon juice (if using).
- Step 3: Pour the mixture into your ice cream maker and churn according to the manufacturer's instructions (typically 20-25 minutes).
- Step 4: Once churned, the ice cream will be soft-serve consistency. Transfer the ice cream to an airtight container and freeze for at least 2-3 hours to harden.
- Step 5: Before serving, let the ice cream soften slightly at room temperature for 5-10 minutes for easier scooping.
Notes
- To prevent ice crystals, press a piece of plastic wrap directly onto the surface of the ice cream before sealing the container for freezing.
- If your ice cream gets too hard, try microwaving it in 10-second intervals, stirring in between, until it reaches your desired consistency.
- Serve this tropical delight with toasted coconut flakes and a sprig of mint for an extra touch of elegance.
- For a more intense pineapple flavor, roast the pineapple chunks before blending to caramelize their natural sugars.
