- 1 cup (2 sticks) unsalted butter, softened
- 1 ¾ cups granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder

- 1 cup shelled pistachios, roughly chopped
Instructions
- Step 1: Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan. Line the bottom with parchment paper, leaving an overhang on the sides to help with lifting out the finished blondies.
- Step 2: In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
- Step 3: In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
- Step 4: Fold in the chopped pistachios.
- Step 5: Pour the batter into the prepared baking pan and spread evenly.
- Step 6: Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs attached. Do not overbake.
- Step 7: Let the blondies cool completely in the pan before cutting into squares. Lift out using the parchment paper overhang.

- Store leftover blondies in an airtight container at room temperature for up to 3 days, or freeze for longer storage.
- For a warm, gooey treat, reheat individual blondies briefly in the microwave or oven until heated through.
- Serve these pistachio blondies alongside a scoop of vanilla ice cream or a dollop of whipped cream for an extra decadent dessert.
- To prevent overmixing and ensure a tender crumb, gently fold in the dry ingredients until just combined; a few lumps are okay.
