Instructions

  1. Step 1: Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan. Line the bottom with parchment paper, leaving an overhang on the sides to help with lifting out the finished blondies.
  2. Step 2: In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  3. Step 3: In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  4. Step 4: Fold in the chopped pistachios.
  5. Step 5: Pour the batter into the prepared baking pan and spread evenly.
  6. Step 6: Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs attached. Do not overbake.
