Instructions
- Step 1: In a medium saucepan over medium heat, combine the sweetened condensed milk, chopped pistachios, cocoa powder, butter, and salt. Stir constantly until the mixture comes to a gentle simmer.
- Step 2: Reduce the heat to low and continue to stir constantly for 8-10 minutes, or until the mixture thickens significantly and begins to pull away from the sides of the pan. If using chocolate chips, add them during the last 2 minutes of cooking and stir until melted and incorporated.
- Step 3: Remove the saucepan from the heat and transfer the brigadeiro mixture to a lightly greased bowl or plate. Let it cool completely to room temperature. This is crucial for easy handling.
- Step 4: Once cooled, grease your hands lightly with butter or oil. Roll the brigadeiro mixture into small balls (about 1 inch in diameter).
- Step 5: Optional: Roll the brigadeiro balls in the extra chopped pistachios for garnish.
- Step 6: Place the brigadeiros on a parchment-lined plate or tray and refrigerate for at least 30 minutes to firm up before serving.

- Store leftover brigadeiros in an airtight container in the refrigerator for up to a week.
