Instructions

  1. Step 1: Finely chop the semi-sweet chocolate and place it in a heatproof bowl. In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer. Pour the hot cream over the chopped chocolate and let it sit for 5 minutes to melt the chocolate.
  2. Step 2: Gently whisk the cream and chocolate together until smooth and glossy. Stir in the softened butter until completely incorporated. Add the pistachio extract (if using) and mix well.
  3. Step 3: Stir in 1/2 cup of the finely chopped pistachios. Cover the bowl with plastic wrap, pressing it directly onto the surface of the ganache to prevent a skin from forming, and refrigerate for at least 2 hours, or until firm enough to roll into balls.
  4. Step 4: Once the ganache is firm, roll it into 1-inch balls. In a shallow dish, combine the powdered sugar and cocoa powder.
  5. Step 5: Roll each truffle in the cocoa powder mixture until evenly coated. Optionally, melt milk chocolate or white chocolate chips and dip the truffles for an extra layer of flavor and visual appeal.
  6. Step 6: Place the finished truffles on a parchment-lined baking sheet and refrigerate for another 30 minutes to allow the coating to set. Store in an airtight container in the refrigerator for up to a week.
