Delicious salmon spinach pasta dish: a delicious and nutritious recipe to try today recipe with detailed instructions and nutritional information.

  • Total Time: 35 minutes
  • Yield: 4 servings

Ingredients

  • Salmon fillet (6 oz)
  • Pasta (8 oz) – your favorite shape
  • Fresh spinach (5 oz)
  • Garlic (2 cloves), minced
  • Olive oil (2 tbsp)
  • Lemon juice (1 tbsp)
  • Salt (to taste)
  • Black pepper (to taste)
  • Parmesan cheese (2 tbsp), grated (optional)

Instructions

  1. Step 1: Cook the pasta according to package directions. Reserve about 1/2 cup of pasta water before draining.
  2. Step 2: While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 1 minute, until fragrant.
  3. Step 3: Add the salmon fillet to the skillet and cook for 3-4 minutes per side, or until cooked through. Break the salmon into flakes with a fork.
  4. Step 4: Add the spinach to the skillet and cook until wilted, about 2-3 minutes.
  5. Step 5: Add the cooked pasta to the skillet along with the lemon juice, salt, and pepper. Toss to combine. If the sauce is too thick, add a little of the reserved pasta water until desired consistency is reached.
  6. Step 6: Serve immediately, topped with grated Parmesan cheese (if using).

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheat gently in a pan on low heat, adding a splash of water or pasta water to prevent dryness.
  • Serve this vibrant dish with a side of crusty bread to soak up the delicious lemon-garlic sauce.
  • For extra flavor, zest the lemon before juicing it and add the zest to the skillet with the garlic.
