Ingredients
- Salmon fillet (6 oz)
- Pasta (8 oz) – your favorite shape
- Fresh spinach (5 oz)
- Garlic (2 cloves), minced
- Olive oil (2 tbsp)
- Lemon juice (1 tbsp)
- Salt (to taste)
- Black pepper (to taste)
- Parmesan cheese (2 tbsp), grated (optional)
Instructions
- Step 1: Cook the pasta according to package directions. Reserve about 1/2 cup of pasta water before draining.
- Step 2: While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 1 minute, until fragrant.
- Step 3: Add the salmon fillet to the skillet and cook for 3-4 minutes per side, or until cooked through. Break the salmon into flakes with a fork.
- Step 4: Add the spinach to the skillet and cook until wilted, about 2-3 minutes.
- Step 5: Add the cooked pasta to the skillet along with the lemon juice, salt, and pepper. Toss to combine. If the sauce is too thick, add a little of the reserved pasta water until desired consistency is reached.
- Step 6: Serve immediately, topped with grated Parmesan cheese (if using).

- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Reheat gently in a pan on low heat, adding a splash of water or pasta water to prevent dryness.
