Instructions
- Step 1: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
- Step 2: Chop the chicken sausage into 1-inch pieces. Cut the bell peppers and red onion into bite-sized chunks.
- Step 3: In a large bowl, toss the chicken thighs, sausage, broccoli, bell peppers, and red onion with olive oil, Italian seasoning, and garlic powder. Make sure everything is evenly coated.
- Step 4: Spread the mixture in a single layer on the prepared baking sheet, ensuring the chicken thighs are not overcrowded.
- Step 5: Bake for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender and slightly charred. The internal temperature of the chicken should reach 165°F (74°C).
