  • Broccoli florets 1 large head
  • Bell peppers (assorted colors) 2 medium
  • Red onion 1 medium
  • Olive oil 3 tablespoons

  3. Step 3: In a large bowl, toss the chicken thighs, sausage, broccoli, bell peppers, and red onion with olive oil, Italian seasoning, and garlic powder. Make sure everything is evenly coated.
  4. Step 4: Spread the mixture in a single layer on the prepared baking sheet, ensuring the chicken thighs are not overcrowded.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheat in a skillet over medium heat or in the microwave, adding a splash of water if needed to prevent drying.
  • Serve this vibrant dish over quinoa or rice to soak up all the flavorful juices from the sheet pan.
  • For extra crispy chicken, broil for the last few minutes, keeping a close eye to prevent burning!
